I decided to go shopping for my friends...
Sayyidah Seema Z, I went to the local fruit market....which has recently opened.It carries most of the Desi Grocery now which is a very good news for all us Desi's living in this area for million of years.
Yeeeeeeaah!!!!
For in the past every time we needed something Desi Desi!!! ...we had to drive an hour away  to Devon.- Chicago.

There is another Zabiha halal food market opened call Zam Zam now... so buying meat locally is very convenient for us.Finally...!!!
Since it is late August...the store was packed with seasonal fruits and vegetables at its peak...especially  peaches and cucumber.

I could not help pondering over the Beautiful Soorah Rahman in the Qur'aan...

One cannot help reflecting over Allaah Kareem's Blessing's in Life... looking at all the wonderful variety of fruits and vegetables.
I could not also help smiling at the cashier looking at me juggling my huge purse,[I like to carry everything just in case]
  my Iphone,[in case there is an Mashwarah [Advise] emergency in the family.

I wanted to make something 'Jhat Pat' [quickly]..healthy and not too spicy.
The Menu

Signature Bean Salad Cholay Sholay

Bean salads are not only a great summer trend,but it is a versatile dish year around.I love making it because it is easy to make healthy it can replace the meat as protein too. In addition, bean salads are very tasty too...and life saver for all those weight conscious souls. 
My Bean Salad recipe keep changing with the season and kitchen stocking Mood!
Meaning I try to make the best of what I have... and love experimenting.

1 Can of Garbanzo beans
1 Can of Green Beans
1 carrots, diced
1/2 cup tomatoes, halved
1/2 cup cucumbers,chopped
Dates 3 chopped small
Walnut as you like

Dressing
3 tablespoons olive oil
3 tablespoons lemon juice
pinch of sugar

1/4 teaspoon black pepper, fresh ground
1/2 teaspoon real salt
2 fat pinch of Zeera [cumin powder]
1 garlic clove, minced [optional]

1/4 cup fresh parsley, chopped [optional]
6 Large Mint leaves, chopped 
[For garnish and for adding in the Salad]
Good old Hara dhania or Coriander leaves as much as you want
Just assemble everything...add can of Cholay [ Garbanzo Beans] Green beans and the rest of the chopped vegetables all in a bowl.

 Drizzle dressing over bean salad.

     Refrigerate for one hour prior to serving.
Before serving garnish with fresh mint and coriander leaves.


 
Spinach and Beet Summer Salad


 
This easy-to-do salad is a tangy and healthy way to add fresh spinach and beets to your diet....

Ingredients

    2 large fresh beets
    3 cups torn fresh Baby spinach
    Onions slice thin [As much as you feel like adding]
     2 tablespoons lemon juice or vinegar
    1/4 cup olive oil
    1-1/2 teaspoons sugar
    1/8 teaspoon salt
    Dash pepper

    1/2 teaspoon minced fresh mint

1-       1-½ Peach  medium

    Small chunk of Feta Cheese


Directions



    Place beets in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until tender. Cool; peel and cut into 1/4-in. strips.

    In a small bowl, add lemon juice and gradually whisk in oil. Add the sugar, salt and pepper.

 In a large bowl, arrange spinach leaves in the bottom, add slice beets peaches cheese, onions, and mint. Cover and refrigerate for 30 minutes. Just before serving drizzle with the dressing.
 
 


Boti Chicken Tikka with Onion and Pepper

Boti Kabab
Ingredients
 Chicken [boneless or bone-in] 3 lbs
 Yogurt [Half a cup]
 Minced garlic  4 tbsp
  Minced ginger 2 tbsp
 Salt to taste
Lemon juice
Method
Mix the garlic, ginger,Tikka Masala [Spice Mix] lemon juice, and salt with the yogurt
Marinate the chicken pieces in the yogurt mixture for at least 3 hours [preferably overnight]

  Grill over open barbeque grill or bake in oven

  Oven baking instructions: preheat to 450 degrees; spread chicken pieces on a baking tray or shallow baking dish, cover with any leftover yogurt marinade; cover with foil and bake for 20 minutes; remove foil, apply a light touch of olive oil with a brush over the chicken, and broil on low heat for 10 minutes 
[or until golden brown].
I was just plain lazy so I cooked in the pan,and browned the chicken pretty well,to fake the grill effect!!
The koila [coal] dam of duhaan [smoke] effect would have been awesome!!! But who will look for the coal...!!!
I have to make the dessert ..then check my email...then look for my Maria B...in the closet.For that cool Ma! Look!
so if you are in Jaldi Jaldi effect [Quick] then this is fine.
Rest why are you staring at my chicken..!!!
Yes! I know it is too much for 4 people....but think about the future!!
If you make more Tikka boti!!! you do not have to cook for 
tomorrow!!! Jhuti [Holiday]
You see only meat...but I see....sandwich,kabab roll,patties,jalfrezi,salad.....& many more creation in its existence.
Nazr Nazr ki Baaat hai...!!



Cut Green Pepper and Onion in chunks and stir fry little bit and add to the chicken for the grand Finale effect.

 

Pulao-Matar Recipe





Serve with Raita or Achaar.
- 1 Cucumber
- 1 Tsp Salt
- green Chillies 1 Tsp
- cummin Seeds Roasted
- fresh Coriander Leaves
- 2 Tbsp Onion Finely Chopped
- 1 Cup Yoghurt Whippedr

Instructions
Peel and grate the cucumber. Grind the green chillies and coriander leaves. Mix all the ingredients and serve chilled.

       Raita Yougurt Dip

Raita [a cold yogurt condiment] 
is often served with Desi food to cut the heat of the spicy dishes.

What you need


1 large cucumber, halved,coarsely grated
2 cups plain whole-milk yogurt
1/4 cup [packed] chopped fresh mint
1 teaspoon ground cumin
1/4 teaspoon plus pinch of black pepper
Coriander and Mint leaves
you can add chopped onion and tomatoes too 

Preparation
Whisk yogurt, mint, cumin, and 1/4 teaspoon black pepper in medium bowl to blend. Add grated cucumbers and toss to coat.You can add onion and tomatoes too. Season raita to taste with salt and pepper. Cover and refrigerate at least 2 hours.

What You Need

 1 table spoon Cream Cheese, softened

1/3 cup sugar

1 tub Cool Whip- Whipped Topping, thawed

2 teaspoon condensed milk [optional]

8 strawberries, halved banana grapes peaches berries whatever you have…no masla!

I used grapes banana and peaches

Pie crust already made – Just bake it in 400 degree for 7-8 min till it is done.



Prepare all your fruits….add half teaspoon of sugar and let them mingle shingle.

Mix cream cheese, and condensed milk and gently stir in whipped topping; add fruits…. And spoon over crust. I garnished with leftover brownie and mint…but you can are welcome to use your imagination.

REFRIGERATE ….and  enjoy.

We were deep in our conversation and sad to know that ...my friend have not visited  her ancestral country for quite sometime.Her mother do visit every year but as she said ... it is 'Not the same anymore'.

The recent Gulf War has destroyed everything ..
I was pondering at this sad reflection.....kay Kya zamana Aa gia ...kind of talk!
When we heard some commotion outside it was pouring out side
that Toofani [Stormy] effect.


I love Storms...!!! no not the Toofani one,which brings disaster but the nice calm beautiful ones, which  produces the most gorgeous sunset and sunrises.



We were still deep in our conversation when we heard strong wind noises,rustling of the leaves and looming dark dark [badal] clouds passing by.At first we did not pay attention ...too busy enjoying dinner inside.



Then suddenly I heard the noise..the strong wind had knocked over the chair outside in my tiny balcony!!!



At this point I was remembering Uncle Ghalib....





and doing my version of





Ya Illaahie Ye Majra Kya Ha !!!

Mujhay Bahar Bulanay Ka Bahana Kya Hai!!



It seem it was calling for our attention! storm showing tantrums in my expression!!!



I grabbed my camera...and went outside.On one side was the most gorgeous midnight blue color sky, calling my artistic attention...and the other side was a most stunning golden glow of setting sunset.



I frantically pressed the record button ...moving my camera back and forth trying to capture both end of the evening drama!!!



It was slightly drizzling ...and I was torn between two love sight...!!



There was a message in this commotion, no matter how dark our nights get,the other side the end is beautiful like the golden Glow of the Sunset...



Sub Haan Allaah!!!



The video seem amateurish and funny!!! but interesting for those who would like to see things from Artist perspective...the crazy soul in me.!!!
